CURRY CURRY PINEAPPLE CURRY
Makes 4-5 portions, ~1h to make.
You'll need:
- 1 Can pineapple chunks
- 1 Can coconut milk
- Mild curry blend
- Chili flakes
- Soy sauce
- 100g smoked pork belly (can substitute with bacon or similar 50/50 fat/meat spiced meat)
- Rice
- 700g potatoes
- 400g chicken breast
- 300g carrots
Proportions of potatoes/carrots/chicken can be adjusted to taste but the total mass should stay the same (~1.5kg).
I cooka da curry
- Wash and peel the vegetables, cut the chicken. Everything should be in large chunks. Thick disks for carrots.
- Get a stir-fry pan and some oil, high heat. Toss the chicken in first, cook until it's all white and you don't visually register any pink spots.
- Toss the carrots and potatoes in together with the meat. Stir fry for a couple of minutes, the vegetables should develop some golden spots here and there.

Pour in the coconut milk (shake it a bit beforehand), add spices:
- Curry blend - roughly 1-1.5 full teaspoons. It looks like too much but trust me it's not.
- Chili flakes to taste. You need at least a little bit even if you don't like spicy food. Alternatively you can use a spicy curry blend.
- Soy sauce - this is the main source of salt, so add to taste. - Add some water, preferably not cold.
- You are about 1/3 of the way in so might start to think about setting the rice.
- Keep on high heat until the mass starts to boil, afterwards lower the heat to the point where you see bubbles but not too much action.
- Cook for 15-20 minutes, adding more water if too much evaporates (whenever the liquid looks thick).
- Add the contents of the pineapple can, including the juice. Also add the finely chopped pork belly or whatever else you have.
- Continue cooking, adding water as needed. Cook to the point where the liquid is thick and the potatoes are fully cooked and buttery smooth. They should feel soft when you stir.
Plate with rice 50/50, you've seen it in anime. Also goes pretty well with pasta.
